Fresh Basil Pesto

Ingredients

80.0 grams Fresh Basil
1.0 clove Garlic
30.0 grams Pine Nuts (toasted)
50.0 grams Parmesan (freshly grated)
100.0 ml Extra Virgin Olive Oil
1.0 pinch Sea Salt
1.0 pinch Black Pepper

Toast the pine nuts in a dry frying pan until just golden. Watch carefully — they burn quickly.

Add pine nuts, basil, garlic, a few glugs of oil and a pinch of salt to a food processor. Blend, adding more oil until it forms a paste.

Turn out into a bowl. Add pepper, grated parmesan and a little more oil. Mix together.

Taste. It probably needs more cheese, salt or oil. Add a little of what you think it needs, taste again, and repeat until you're happy.
